Avocado and Egg Salad Sandwich Recipe

Ingredients

  • 2 slices Sara Lee Delightful White Made with Whole Grain Bread
  • ½ avocado, chopped
  • 3 hard-boiled eggs, chopped
  • ¼ cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • ½ teaspoon lemon juice
  • 2 tablespoons scallions, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tomato slices

Directions

  1. Mix ingredients together in a large bowl. On one slice of bread, place the two slices of tomatoes. Then scoop on a large helping of the avocado-egg mixture. Top with remaining bread slice. Enjoy!
